Liposomes
Liposomes are inspired by cell membranes that are found in all living creatures in nature. Those spherical vesicles are able to encapsulate water-soluble as well as hydrophobic molecules due to the amphiphilic properties of the phospholipid bilayer.
In food industry, liposomes are used for:
-
conservation of food, e.g., antibacterial agent nisin in liposomes acts as a long-term preservative with controlled release properties, inhibiting a variety of Gram-positive bacteria, food pathogens and contaminants such as in cheese
-
encapsulation of small molecules, such as nutritional supplements, e.g., liposome membrane enables water soluble vitamin C as well as fat-soluble vitamin E to be stored and protects vitamins from reaction and oxidation in a short period of time
-
encapsulation of enzymes, e.g., β-galactosidase is added to the milk for lactose intolerant people and since the free enzymes alter the flavor, the encapsulated enzyme is a taste-free solution
-
encapsulation of minerals, e.g., calcium ions in liposomes prevent protein coagulation in soy milk
-
encapsulation of herbal supplements, e.g., liposomal curcumin has improved bioavailability
-
encapsulation of lipid soluble flavors, such as vanilla or menthol in stable non-phospholipid-based molecules, for improving flavors of food
As such products are mostly produced in large amounts, one of the biggest challenges is finding ways to scale up your liposome production without using high volumes of expensive solvents in the process. Dyhydromatics ShearJet processors generate high-shear forces to the formulation and this is typically sufficient for production of high-quality liposomes. That means you can spend less on solvents (and less time removing them) when you scale up your production with these high shear processors.
At all production levels, the ShearJet’s Diamond Reaction Chamber applies the same high-shear rate to every mL. This allows you to consistently produce high quality, uniform, nano-sized liposomes in the quantities you want. Each ShearJet model comes with a simple feed, helicoil heat exchanger that effectively cools your product in the Diamond Reaction Chamber so there is little-to-no denaturing or damage to your liposomes and therapeutic agents. This, plus fewer passes through the chamber, gives you tighter control over the pressure levels, temperature and shearing forces batch after batch.
The ShearJet’s pharma-grade parts are easy to clean between runs so you can meet some of the most stringent cGMP sanitation protocols. Also, the portability of the HL60 processor makes it an economical addition to your facilities. You simply move it from room to room as you make multiple types of liposomes throughout the day.

Nanoemulsions
Those nanosized water-in-oil (w/o) or oil-in water (o/w) emulsions of two immiscible liquids stabilized with suitable surfactant are frequently present in your kitchen, e.g., mayonnaise , Hollandaise sauce, homogenized milk, vinaigrette (emulsion of vegetable oil in vinegar), butter and margarine. Nanoemulsions also became a most welcome solution for encapsulation of water-insoluble vitamins. Such formulation prevents vitamins from degradation and enhances their bioavailability in human gastrointestinal system. The nanoemulsion of fish oil as a nutritional supplement delivers the desired unsaturated fatty acids to the body and at the same time masks the dominant fish taste and smell.
But to create viable products, you need scalable processing equipment that consistently and uniformly produces nano-sized particles and distributes them evenly in the nanoemulsion. Dyhydromatics gives you that competitive advantage. Our laboratory processors are directly scalable to our pilot/production scale processors due to its unique reaction chamber technology.

Dyhydromatics ShearJet processors make it easy to fabricate highly stable nanoemulsions batch after batch. As the initial macroemulsion flows through the ShearJet Diamond Reaction Chamber, each mL experiences the same high shear rates. This produces uniform and precisely-sized nano-droplets without using solvents. Fewer passes reduce your processing time and costs. Plus, the uniformity of the nano-particles allows you to sterile-filter your nanoemulsions which can significantly lower your sterilizing expenses.

The ShearJet processors are designed to overcome several other nanoemulsion production challenges. Each comes with a simple-feed, jacketed, helicoil heat exchanger which reduces temperatures that may trigger denaturing or damage to the microemulsions. You will never have to refill equipment ice compartments during the process again. The ShearJet’s pharma-grade parts are easy to clean between batches which helps you meet the most stringent cGMP sanitation protocols. Plus, the portability of the HL60 processor makes it an economical solution when producing multiple medicines in multiple rooms daily. Simply move the processor from room to room.

Nanoencapsulations
Food additives such as water-insoluble vitamins, vitamins B and C; omega-3 fish oil and other oils; antioxidants: lutein, carotene, lycopene; orange, mint, rosemary extracts; citric acid, etc. are indispensable in our nutrition or in our sensory perception of food. The encapsulation of those food ingredients protects them from the environment and offers major benefits in food industry. The small particle sizes lead to improved bioavailability of the encapsulated flavor or food ingredient, which is especially convenient for flavors with low solubility. The encapsulated antimicrobial conservatives have higher biological activity, a benefit of controlled release of an active ingredient and contribute to improved shelf stability of the product. If particles of less than 100 nm are achieved, this results in an optically transparent solution, which is desired for beverages. Apart from lipids, other natural polymer carriers, e.g., amylose, beta-cyclodextrins and pea starch, can be used for encapsulation of hydrophobic food ingredients.

Polysaccharide Nanoparticles
Polysaccharides are indispensable in food industry since they can effectively stabilize food systems due to their gelling, water-holding, emulsifying, and thickening properties. They play important roles in controlling the texture of foods as well as their flavor, appearance and color. They are routinely used in frozen foods to maintain the texture during freeze-thaw cycle, e.g., to prevent the formation of ice crystals; in dry mixtures to quickly absorb water or milk in reconstitution; their gelling properties are used for puddings and other dessert gels; their emulsification properties are used for salad dressings and sauces, and stabilization properties for beer foam, milk shakes, fruit juices, etc.
