Liposomes

Liposomes are inspired by cell membranes that are found in all living creatures in nature. Those spherical vesicles are able to encapsulate water-soluble as well as hydrophobic molecules due to the amphiphilic properties of the phospholipid bilayer.

 

In food industry, liposomes are used for:

Nanoemulsions

Those nanosized water-in-oil (w/o) or oil-in water (o/w) emulsions of two immiscible liquids stabilized with suitable surfactant are frequently present in your kitchen, e.g., mayonnaise , Hollandaise sauce, homogenized milk, vinaigrette (emulsion of vegetable oil in vinegar), butter and margarine. Nanoencapsulations 

Food additives such as water-insoluble vitamins, vitamins B and C; omega-3 fish oil and other oils; antioxidants: lutein, carotene, lycopene; orange, mint, rosemary extracts; citric acid, etc. are indispensable in our nutrition or in our sensory perception of food. Polysaccharide Nanoparticles
